This unit will provide students with an understanding of the use of biotechnology in the food industry. Students will develop theoretical and practical skills in the use of microorganisms, eukaryotes and prokaryotes, or products from these organisms, in controlled food production and processes, based upon a sound knowledge of the techniques used in engineering of organisms. Topics covered include: growth and production of food grade microorganisms using bioreactors; utilisation of food grade enzymes and protein technology in biological processes; food processes; genetic manipulation of organisms, including transgenic plants and animals, and microorganisms; commercial development of... -- Course Website
