This unit provides the links between scientific principles and the practice of viticulture. It contains information about grapevine classification, structure, function, physiology and propagation and the climate and soils in which vines grow. These concepts are developed further to show how they impact on berry composition and wine attributes and how they can be manipulated in the vineyard to achieve the desired crop yield and fruit quality specifications. Topics covered fall into the following broad categories: grapevine anatomy, function and growth; berry development, composition and ripening processes; climate, water and soil; vineyard management practices to achieve specification. -- Course Website
